Personally, I can’t say how good these breads are, as I haven’t tried them yet (on Etienne , that is)… but I’ll keep you posted on the results!! :-)


Pumpkin Bread

Ingredients

* 1 cup toasted pumpkin seeds (pepitas)
* 2 cups flour
* 1 tsp baking powder
* 1 tsp bicarbonate of soda
* 1 tsp salt
* 2 tsp cinnamon
* 1 tsp ground ginger
* pinch nutmeg
* 2 cups cooked pumpkin
* ½ cup sugar
* 1/3 cup treacle brown sugar (demarera)
* 1/3 cup sunflower oil
* 2 large egg
* ¾ cup yoghurt or buttermilk

Directions

Preheat oven to 160 degrees. Toast pepitas by placing them on a baking tray in a 140-degree oven for 10 minutes. Keep a careful eye on the pepitas, they roast quickly. Remove from the oven and let cool. Retain ½ cup aside to sprinkle on bread. In a food processor, pulse chop the remaining ½ cup to a coarse consistency. Puree pumpkin and set aside. Mix dry ingredients together. Stir sugars and pumpkin together. Process oil and eggs in food processor with a metal blade. Add dry ingredients, then pumpkin and pulse to blend. Add buttermilk or yoghurt. Line a loaf tin 15 cm with baking paper. Spray with oil. Bake bread for about 50 minutes or until well browned. Allow to cool in tin. Bread freezes very well, reheat if desired. Serves 8.

Pear Banana Bread

Ingredients

* 2 bananas
* 2 pears, peeled, chopped
* 2 cups flour
* 1/2 cup white sugar
* 1/2 cup brown sugar
* 1/2 cup butter
* 1/4 cup vanilla yogurt
* 2 eggs
* 1 teaspoon baking soda
* 1 teaspoon vanilla
* 1 teaspoon cinnamon
* 1/2 teaspoon ginger
* 1/4 teaspoon nutmeg

Directions

Preheat oven to 350.
Mash bananas and pears in a bowl.
In a separate bowl, mix the rest of the ingredients until creamed together.
Pour the batter into a greased loaf pan.
Bake for an hour and half.
Let cool for at least 10 minutes so it doesn’t fall apart (it solidifies more with time).

    Résultat des courses : j’ai essayé la recette de pain banane poire, et c’est très bon, Pascal peut en témoigner. Etienne est au lit alors on attendra son verdict : ba-ba-ma-ma sans doute, demain. @+ !!

    On verra, en tout cas le petit père pas trop dodu a aimé et mangé de bon appétit. Il a eu un déclic il y a quelques jours e s’est mis aux solides :-) Du coup je brainstorme à mort pour lui donner des choses intéressantes à manger…

    Mmmm, yummy! Je me disais justement qu’il fallait de cuisiner l’un de ces pains. Chuis très portée sur le banana bread tout court par contre !
